Goa [India], November 3: There is a distinct, almost sacred rhythm to Goa when November arrives. The monsoon’s retreat makes way for the crisp allure of the high winter season, a time when the region’s cultural calendar becomes the exclusive domain of those who seek the extraordinary. This year, that search leads inevitably to the iconic destination of Taj Cidade de Goa. From 4th to 7th November 2026, a momentous alliance unfolds here as the Portuguese Consulate, Fundação Oriente and Taj Cidade de Goa come together to present a four-day culinary residency led by Lisbon’s celebrated chef, researcher and food writer, Chef André Magalhães.
This endeavour succeeds by leaning heavily into the distinct strengths of its three founding institutions. The Portuguese Consulate in Goa provides the essential diplomatic prestige, elevating the residency into a high-level state cultural exchange. Acting as the cultural custodian, Fundação Oriente ensures absolute historical authenticity, grounding every menu in decades of research. Bringing this ambitious vision to life is Taj Cidade de Goa, serving as the luxurious hospitality epicenter. Operating through the legendary, old-world charm of Alfama, the resort provides its world-class kitchen brigade and an ultra-premium setting to transform complex historical research into a flawless sensory experience.
Crucially, the multi-day itinerary drives an agenda of sustainable knowledge transfer that begins well before the first wine cork is pulled. On 4th November, the initiative launches with an intensive, hands-on masterclass dedicated entirely to the students of the Goa College of Hospitality and Culinary Education, instilling foundational Portuguese techniques and flavour structures into the next generation of local talent.
Reflecting on this foundational impact, Mr Vivek Batra – General Manager, Taj Cidade de Goa shares “This collaboration celebrates the enduring bond between our regions, bringing shared culinary heritage to life through food and culture. By bringing Chef André’s historical research into this residency, we are offering guests a deeper appreciation of the stories and traditions behind every flavour. At Taj Cidade de Goa, we are equally committed to preserving this legacy by nurturing young talent and our culinary brigade, ensuring these authentic techniques and traditions are carried forward for generations to come.”
The momentum transitions into the professional realm on 5th November, where Chef André will conduct technical training with culinary enthusiasts who wish to understand the secrets of classic Portuguese structures.
The absolute pinnacle of this residency lies in the two spectacular evening showcases. On 6th November, The Portuguese Table wine-pairing gala introduces diners to rare heritage masterpieces. The menu features the iconic Bacalhau à Brás com Pó de Azeitona Preta—a sublime dish of authentic Portuguese salt cod and finely cut potatoes bound elegantly with egg and finished with an intense black olive powder. Vegetarian and egg-free epicures will indulge in the equally sophisticated Empadinhas de Requeijão com Mesclun de Salsa, showcasing delicate Requeijão tartlets paired with a fresh parsley-leaf salad. Each course will be seamlessly paired with rare, premium Portuguese vintage wines, transforming the evening into an immersive journey of terroir and high-society storytelling.
The grand finale on 7th November, Lisbon Meets Goa, celebrates the ultimate, seamless fusion of traditional Portuguese methods with vibrant, local Goan ingredients and cooking styles, anchored by iconic adaptations like Carne de Porco de Vinha d'Alhos and the uniquely crafted Pataniscas de Berinjela.
With seating kept intentionally scarce to preserve an atmosphere of absolute prestige, this four-day festival has already become the defining placeholder in the season's social calendar. Through this united front, the three participating institutions are offering something rare: a dinner that is both an act of cultural preservation and the most coveted ticket in town. To miss a seat at Chef André’s table is to miss the most sophisticated cultural crossroads of the year an invitation to see, be seen, and savor a living culinary language that will not return.
